We address food insecurity through a circular and sustainable model of free-range egg production. We established two urban laying hen farms in community kitchen locations in Manchay and trained leaders in organic waste segregation and its bioconversion using black soldier fly larvae to produce animal feed. These larvae serve as a natural, high-value food source for the hens, which produce the necessary eggs for the nutritious baskets of the community kitchens and, in the future, for commercialization to increase their income.
Cooks from community pots and valley producers come together in Sunday fairs to offer their products in Manchay’s civic plaza, with support from the Pachacamac municipality. As of this publication, in four editions, all participants have recouped their investments and earned over 20,000 soles to improve their economy and reinvest in future festivals.
With the participation of multiple stakeholders, we are creating enabling environments that facilitate the implementation of better public policies, new regulatory frameworks (ordinances, council agreements), and inclusive projects and programs.
